A food handler keeps the food in front of them safe. A food safety supervisor keeps the whole operation safe: the people, the procedures, the premises and the records. When something goes wrong, the questions change. A food handler is asked "What did you do?". A supervisor is asked "Why did your system allow it, and how did you not notice?".

This course is the third level of food safety training. It assumes you know the basics taught in the course Food Safety Level 1: the four types of hazard, the danger zone, handwashing, cleaning and pest awareness. Here you learn to apply those basics, choose between controls, diagnose what went wrong and adapt your system when the operation changes.

Four things a supervisor manages

Most of a supervisor's food safety work falls into four areas, and the course follows them:

  • Hazards: knowing which microbiological, physical, chemical and allergenic hazards your menu and your process carry, and how they cause harm.
  • Controls: the prerequisite programmes (suppliers, storage, premises, cleaning, pests, personal hygiene) and the critical controls such as cooking and cooling.
  • People: training, supervising, checking competence and deciding who is fit to work.
  • Proof: monitoring, records, verification, audits, and what you do when something goes wrong.

Three settings, one job

Patients may be elderly, pregnant or have weak immune systems. A supervisor here must be stricter about high-risk foods such as soft cheese and cold cooked meats, and must keep special diets and allergens under tight control.

Match the task to the area a supervisor manages

Match each supervisor task to the area it belongs to.

  • Listing which dishes contain sesame
  • Setting the cooling method for large batches of rice
  • Watching a new cook take a core temperature
  • Signing off the weekly fridge records after checking them

What is the main difference between a food handler and a food safety supervisor?
